Our client, a rapidly expanding and innovative leader in the beef processing industry, is seeking a results-driven Director of Quality Control to lead and continuously improve their food safety and quality programs at their Madill, Oklahoma facility. This is a high-impact, floor-present leadership role – not a desk job – for someone with deep expertise in beef processing and a command of regulatory compliance. The ideal candidate will possess the operational instincts to drive a culture of accountability and continuous improvement across the plant floor. This is a unique opportunity to establish the Quality Control function from the ground up within an organization experiencing exponential growth.
Key Responsibilities:
- Lead and manage all Quality Control functions across production, including in-process monitoring, finished product inspection, and daily floor presence.
- Ensure full compliance with USDA regulations, BRC certification standards, and all applicable food safety requirements.
- Own product specification adherence – actively monitor and enforce standards for beef cut specs, weights, yields, and packaging accuracy.
- Identify and resolve quality deviations in real time; implement corrective and preventive actions (CAPAs) with urgency and follow-through.
- Partner cross-functionally with Production, QA, and Operations leadership to align on quality standards and close performance gaps.
- Track and analyze yield performance metrics; report trends and drive continuous improvement initiatives.
- Manage and develop QC staff.
- Oversee finished goods verification processes to ensure outbound product meets all customer and regulatory specifications.
- Maintain all required documentation, QC logs, and records in support of audits, regulatory inspections, and internal reviews.
Qualifications:
- Proven leadership experience in Quality Control within a USDA-regulated, SQF- or BRC-certified meat or protein processing environment.
- Deep knowledge of food safety systems, regulatory compliance frameworks, and process control methodology.
- Experience specifically in beef processing is strongly preferred. Candidates with pork or other meat experience are not a fit for this role.
- Strong analytical skills with the ability to interpret yield data, QC metrics, and production performance indicators.
- Demonstrated ability to work cross-functionally – building trust with production teams while holding the line on standards.
- Hands-on leadership style; comfortable on the floor, identifying gaps, and acting decisively to correct issues.
- Excellent communication skills – able to translate QC requirements into clear expectations for floor-level teams.
- Bachelor’s degree in Food Science, Animal Science, or a related field preferred; equivalent experience considered.
- Must thrive in a fast-paced, high-action, “100 miles per hour” environment with a high tolerance for experimentation and change. This is an opportunity to build processes and structures from scratch with significant autonomy.
Compensation & Benefits:
- Salary: $125k – $150k base + bonus.
